This Creamy Mushroom Soup with Ditalini Pasta and Sausage Polska Kielbasa is simple to put together and extremely delicious. I made this for my family for dinner – having enough left over for lunch the next day. We all loved it and it had a great combination of flavors that will keep you wanting more.
Creamy Mushroom Soup ingredients:
- 5 ounces of fresh uncooked spinach
- 1 can of cream of mushroom soup
- 1 15oz can of chicken broth
- 1/2 Polska kielbasa chopped
- 2 cups of ditalini pasta
- 1 16 oz package of fresh cut mushrooms
- 1 whole sweet onion chopped
- 1 cup of parmesan
- 1 cup butter or margarine
- Approx. 10 cups of water
Creamy Mushroom Soup Directions:
This is fun and easy to make. It’s almost like making hamburger helper. Approx. 30 min. to prepare start to finish.
- Start by melting the butter in a deep saute pan over medium heat.
- Add the mushrooms and onions, cover with a lid, and lift to stir occasionally until sautéed.
- Chop the kielbasa into 1/2 in. square pieces and add to the mushrooms and onions.
- Next, Add 2 of the cups of water along with the chicken broth, turn the heat up to medium-high, cover with lid, and bring to a boil. Remember to stir throughout the process to keep the noodles or anything else from sticking together or to the pan.
- Now you will add the ditalini pasta, continue cooking on medium-high heat until the pasta is fully cooked. Add more water as needed in case it boils off. Keep a consistent 3 to 4 inches of water in the pan during the cooking as to keep from burning.
- Once the noodles are ready, add the cream of mushroom soup. Stir in until smooth.
- Lower to medium heat, bring to simmer and finally add all of the spinach. Cook until wilted.
- Add the remaining water and I suggested approximately 10 cups total, but this depends on the desired thickness. Less water for more of a stroganoff type of meal, more water for a soupy base. I personally prefer this recipe as soup. Bring to a boil and add Salt or Pepper to taste.
- Now fill a bowl with the soup and sprinkle a couple pinches of parmesan on top. ENJOY!
