My kids love Mac & Cheese but let’s face it – from a dad standpoint – it can get old really fast. So my wife and I decided to come up with a fun new way to use Mac & Cheese that my kids love (but I love just as much). They are Mac & Cheese Bacon Cups! Super easy to make and tastes so good.

You will make the macaroni and cheese according to package directions. While the noodles are cooking you will take about 5 strips of cooked bacon and cut them into pieces and (if they are not crunchy) fry them in the pan for a few minutes. Set these aside as well as about 3/4 cup of freshly grated parmesan cheese.
When the Macaroni and Cheese is done, start by layering it in the bottom of the Silicone Cupcake Pan. Create a little opening in the middle and fill it with bacon pieces and then sprinkle cheese on top. Bake at 350 degrees for about 10 minutes. Take out and cool for about 3 minutes before you start serving. This will ensure that they keep their “cupcake” shape.
The fun thing about this way of making it, is that you can add many different kinds of toppings. You can cut up little cooked hot dogs and sprinkle with cheese. Put some cooked ground beef and sprinkle with cheese. Sausage, pepperonis, and many other kinds of meat. And of course – sprinkle with cheese – because everything tastes better with cheese. Serve these with Tomato Soup sprinkle with…Goldfish crackers for a yummy each lunch!
